The Ries'Soupe®

La Ries' soupe was created by Didier Roeckel, chef de cuisine and owner of the Couronne in Scherwiller, in 1996 on the occasion of the first Sentier Gourmand®. The idea was to create a dish based on Riesling, Scherwiller being one of the highlights of this grape variety in Alsace. Ries' soupe is now a registered trademark.
