Narreklepfer, the iconic sausage of the Sélestat carnival. A gourmet symbol of the Sélestat carnival, Narreklepfer, also known as knack des fous, perpetuates a unique link between Sélestat butchers and this colourful festival.

In 1974, artisan butchers had the idea of reviving the carnival tradition by creating this unique sausage.

Measuring 40 cm long and weighing 135 grams, the Narreklepfer is instantly recognisable. Its original recipe, jealously guarded since its invention, remains a well-protected secret, passed down with pride.

Tasty, convivial and festive, it perfectly embodies the spirit of carnival: a distillation of tradition, pleasure and sharing in the Sélestat style.
